Apple, Pear Oatmeal Cookies
There's something very comforting about freshly made, homemade cookies. My favorite kind of cookies are definitely the oatmeal kind, for their hearty, delectable flavor but because you can pretty much add anything to them. In my case? Fruit. Your entire home will smell of baked apples or pears, bringing more than one body into the kitchen, I can assure you.
These Oatmeal cookies are so warm, decadent, chewy, yet crunchy with apple or pear bits plus cinnamon and a hint of ginger. With simple pantry ingredients you can whip up a batch of two in no time, no seriously.
I like to rough chop my apples or pears before I begin the batter so that all the juices have a chance to come out, making a very moist cookie at the end. (You can opt to pulse them a couple times in the blender for more even pieces. These cookies don't really spread, so just flatten them out a bit with a fork before baking. Finally, if you prefer a crunchier cookie leave them in the oven for an extra 5 minutes.
Serve these cuties with coffee or tea, or just devour them during snack time. A must have staple for your cookie or biscuit jar. It won't disappoint.
Apple or Pear Oatmeal Cookies
- 1/2 Cup Unsalted Butter (1 Stick)
- 1/3 - 1/2 Cup Sugar
- 1 Egg (Large)
- 1/2 tsp Vanilla Extract
- 1 Cup Flour
- 1 tsp Baking Powder
- 1 tsp Cinnamon Powder
- 1/4 - 1/2 tsp Ginger Powder
- 1/2 tsp Salt
- 1 1/2 cups Quick Oats or Rolled Oats
- 2-3 Large Apples or Pears roughly chopped
- 1 tbsp milk (add only if batter is too dry--may not be necessary if the fruit releases some juices
**Preheat oven to 375 degrees Line 2 baking sheets with parchment paper
- Cream butter and sugar
- Add egg and vanilla
- Blend in flour, baking powder,cinnamon, ginger and salt into mixture
- Mix in oats
- Add pureed or finely chopped Apple or Pear bits and mix with spatula
- If your batter is too dry, add milk
Using a 50" scoop (or a little bit over a tablespoon), evenly place cookies onto baking tray, with a fork, flatten them your desired thickness and bake for 15-20 minutes (I like my cookies quite thin)
After cookies are out of the oven place onto cooling rack for 5 minutes then serve
